After washing, the fish enters the buffer tank (receiving perforated table), from which the operators take the fish and, on a special machine, cut off the head / tail and, if necessary, the fins, as well as open the abdominal cavity of the fish, if necessary, and transfer it for further processing - gutting the fish with its additional cleaning from scales (if necessary). Up to 16 operators (16 workplaces) can be involved in this operation.

Then the fish is transferred to a buffer tank (receiving perforated table), from which the operator puts the fish into the portioning machine. The fish is cut into pieces of a given width (This can be 20mm or 30mm). Two different interchangeable knife systems are used for different container parameters and required sizes.

So, the fish is cleaned of scales, washed, without a head, tail, gutted and cut into pieces. The fish must be fried, and before that, prepare it for this operation. For this, an elevator with a vertical conveyor with the function of washing the fish is used, and behind it is another elevator with the function of blowing and removing excess moisture from the fish.

The fish is fed to a breading machine, in which a layer of flour is automatically applied to the fish. After that, there is a conveyor in the line, which simultaneously serves to move the processed raw materials between the breading machine and the frying oven, as well as to "swell" the sprinkling on the fish (crust formation). Then the fish is fried and transferred to the conveyor - cooler, in which the fish is cooled to the required operating temperature.

After that, the fish gets onto a rotating table, which performs several tasks at the same time - a buffer zone for fish ready for packaging, filling the fish itself into cans by 9-10 operators, as well as placing it on it in a circle (along the edge of the table ) empty previously scalded aluminum containers.
