The equipment turned out to be heavy, weighing 200 kg, and they could not even lift it into the apartment. That's how I got the autoclave. By that time, I was convinced that there was no good stew and such good old dish as porridge with stew in stores. Do you remember when such canned food was sold during the USSR? Like many others, I remembered that taste, bought similar canned food, but every time I was convinced: it's all wrong!
I decided: since I am unemployed, I will create an enterprise for myself, I will produce canned food no worse than home. True, I did not use my mother's recipes, but a 1970 textbook, which in Soviet times was specially published for the food industry. Everything is in accordance with GOST, no chemistry. The publication is really rare.

I think everyone knows that you can't find a good stew now in the afternoon with fire. I do not argue, you can find it, but it costs a lot of money. And the price, often, does not guarantee quality, you can find frankly low-quality stew in a bank from a famous brand.
The price of an average quality can of pork stew starts from 150 rubles, I know this from my own experience.
In the best case, there will be 180-200 grams of meat, and even then not clean - with streaks, pieces of bacon.
Therefore, I decided to try to cook the stew on my own, and calculate the approximate cost. It will be better than the store one in any case, but I want to find out how much more profitable it is to make the stew myself.

I will cook stew from pork. Since, I am doing this for the first time, I decided to roll up only two half-liter cans, just for a test.
What I used: 1.7 kg of pork on the bone with skin, onions, salt, bay leaves, black peppercorns.
First, I cut the meat off the bones, removed the skin and cut into pieces the size of a walnut. As a result, a little more than a kilogram of pulp came out, this is just enough for two cans.
Next, salt the meat. For this amount of meat (1.2 kg), I added one and a half teaspoons of salt. Thoroughly mixed the meat and salt in a bowl.

This is done in a matter of days, you just need to look at the tax office at the place of registration with a passport of a citizen of the Russian Federation and fill out an application for state registration of an individual as an individual entrepreneur. You must attach a copy of your passport and a receipt for payment of the state duty to your application (in 2021 it is 800 rubles).
Obtaining Permits
Since canned meat is food, its production is regulated by laws on product safety and quality. You will also need a manufacturer's declaration, as well as the conclusion of Rospotrebnadzor on the premises and according to the recipe.
