Making Wine
The principle of making wine is always the same, the only differences will be in the amount of sugar. The more fruit you collect, the better! Processing them is not at all difficult and fast enough, so that you will not spend a lot of work, regardless of the volume.
What you may need to buy is large containers. A friend gave them to me for free. The size of the container depends on the planned amount of wine.
After collecting fruits, we start processing them. It is important not to wash them. Plugged or collected from the ground, wipe them with a cloth if there is dirt. For the fermentation of wine, bacteria are needed, which are on the surface.
I didn't mix different fruits, I made each wine separately. Someone advises removing seeds from pears and apples. If it is a cherry or apricot, it is imperative to remove the seeds, since they contain poison.
Now all the fruits must be crushed into gruel - for this I used a Soviet food processor, it is electric and all that remained was to fill in the fruit on time. In the same way, you can do this through an electric meat grinder.
I do not recommend using a juicer for these purposes - as it is not designed for such volumes and produces very little juice.
Next, pour the gruel into bottles and add water. Before using bottles, rinse them well with detergent. This must be done to prevent mold or vinegar bacteria from entering the future wine. If this happens, then the wine will deteriorate and it will not be possible to drink it.
The quantity is calculated using tables and formulas from the Internet. Cover with gauze so that flies don't get caught. We do not touch for 3-4 days, let it stand in a dark and warm place.

Greetings to all readers. My name is Alexey, I am 46 years old. I was born and raised in the Stavropol Territory. I am engaged in the production of wine and do it for a living. I have a home winery that brings me a good income. My small business turns 10 this year. I'll start my story about my business from the very beginning.

I saw it - I wanted it
In my family, no one has ever made wine or distilled moonshine. I had no knowledge of this matter. The idea to make wine came to me spontaneously. In 2021 I worked as a welder and received a regular salary. Thoughts about their own business were not even allowed.
In 2021, my family and I went to rest on the Black Sea coast. We had the usual planned vacation: the beach, excursions, walks and visits to local cafes. And so, on one of the excursions, we visited a private winery, where they showed us home production and conducted a wine tasting. The winery was located in the courtyard of a private house and occupied 60 square meters. It had two branches. One contained plastic containers, huge bottles and specific equipment. In another room, there were two large stainless steel tables and several dozen plastic trays. Finished wine and other ripening products were in the basement under the house. Everything there was filled with wooden barrels and glass bottles.
The private winery really gave me a thrill. Everything was home-like, simple and clear.
The walls of the room were made of natural stone and whitewashed. The roof is covered with tiles, and all partitions and doors are made of hand-hewn planks. This design created a special atmosphere that made the homemade wine even tastier.
The excursion program included not only wine tasting, but also lunch in the home dining room. It so happened that the owner of the winery was at dinner. I struck up a conversation with him, where over a glass of tart wine I asked many questions. I was interested in everything: from production technology to paperwork and wine sales. I was so carried away by the process that upon arrival at the hotel I opened my laptop and spent most of the night collecting information about wine production.
The main problem in the production and sale of homemade wine is the state regulation of the issue. In Russia, there is a state monopoly on the production of alcoholic beverages, huge taxes are paid by those enterprises that produce alcohol of even the minimum strength. To open the production of alcoholic beverages, it is necessary to study legislation, taxation, production requirements and many other nuances. It is very difficult for small wine-making enterprises to survive in modern conditions.
Private winemaking is quite seriously developed abroad, for example, in Spain. Grapes grow there in almost every yard of every region of the country. Plantations, like wine, are taxed, but even with a wine cost of 1.6 euros per liter, production remains profitable. There is a system of incentives for small businesses, especially for the production of natural food. And private wine producers significantly support the country's economy with taxes. In our country, unfortunately, such a policy is not supported; a private winery may be more likely to be ranked as the production of moonshine and bring the owner to justice. Therefore, when organizing this type of business, entrepreneurs resort to numerous tricks.
How to register a wine business
These are the advice colleagues give to those who are planning to open their own wine company. When you fill out the form when registering an individual entrepreneur, you must select OKVED "sales of products of your own production." In this case, you can count on not such close attention than with the line in the column "type of activity" with the text: production and sale of wine. Homemade wine of our own production can be sold quite widely: in local restaurants, cafes, in the market, in small shops and shops specializing in the sale of good wine. But the sale of private wine is prohibited in our country, remember this. Therefore, position sales as home-made drinks, do not use the word "wine" at all.
How to sell your own wine

Be sure to divide your vineyard site into zones, and plan the right lighting for each variety. Consider watering and winter storage of the vine. It should be remembered that a good harvest of grapes can only grow in the southern regions, where high temperatures and high humidity prevail throughout the year. The location of the vineyard in such a zone means not only good quality wine, but also the presence of tourists, that is, a large number of potential buyers of this product.
