- Concentration. The resulting juice is evaporated to a syrup. After this procedure, the sugar content increases to about 70%.
- Crystallization. Special installations process the syrup into a crystallized mixture called massecuite.
- Final process. The massecuite can be further processed to obtain a higher quality product.
